U zrodu Pražského kulinářského institutu (PKI, Prakul) stála mimo jiné velká tradice z dob první republiky; známí kuchaři a kulinářští odborníci té doby pořádali kuchařské kurzy pro odbornou i laickou veřejnost. V Praze byly nesmírně oblíbené kurzy Viléma Vrabce (jehož Studenou kuchyni pokládají mnozí současní šéfkuchaři za nepřekonanou), v Hradci Králové působila paní Anuše Kejřová, autorka řady vynikajících kuchařek, a své zkušenosti osobně předávala také slavná Marie Janků-Sandtnerová a mnozí další. Nebyl to však jediný důvod vzniku Pražského kulinářského institutu také z toho důvodu, že česká, evropská i světová gastronomie od těch dob prodělala bouřlivý vývoj. Současné kulinářské trendy přitom zahrnují jak nejsmělejší gastronomické fúze za použití takřka vědeckých metod, tak cílený návrat ke kořenům tradičním způsobům vaření a v neposlední řadě i k ekologickým a k přírodě šetrným způsobům pěstování a úpravy potravin. také rozvoj hotelnictví a restauratérství je v posledních desetiletích v Čechách a zejména v Praze doslova bouřlivý a pro manažery i zaměstnance těchto oborů je potřeba držet krok se světem zcela zásadní. Enormním způsobem také vzrůstá zájem laické veřejnosti o vaření obecně i o specializovaná témata. A to obzvlášť v gastronomii platí, že se učíme celý život...

Kulinářské instituty, školy, školicí programy v oboru gastronomie či kurzy vaření ať už specializované nebo pro nejširší veřejnost jsou ve světě běžnou záležitostí.
